You can, but budget the whole day for driving — it's closer to 3 hours each way from the Hersonissos strip versus 1.5–2 hours from a Chania base. If Elafonisi is a priority, consider basing part of your trip on the west side.
What's the best rainy-day or too-hot backup plan in Crete?
